Plants
Bourbon vanilla plants
Our farm has selected Bourbon vanilla plants, which have high water content but low drought resistance, requiring substantial water supply in their cultivation environment. To support their growth, we’ve installed trellises to maintain an air humidity level of 70-80%. The roots are covered with peanut shells to reduce moisture evaporation, and we use mist irrigation to sustain both air and soil moisture.
Environment
Suitable Environment and Proper Management:
Vanilla is a temperate plant that thrives in warm conditions, with an ideal average daily temperature of 21°C to 29°C. During Taiwan’s winter cold spells, prolonged low temperatures can easily slow its growth and cause frost damage to young shoots. With the arrival of spring, new shoots will begin to emerge at the nodes.
Sunshine:
Vanilla is a perennial, vining herbaceous plant from the orchid family that grows best in partially shaded environments. Direct sunlight or excessive light intensity can easily scorch young shoots, causing leaves to discolor and wither.
Black Net Greenhouse Installation:
Our farm uses a black-net greenhouse that allows natural rainfall, provides ventilation, and can adjust light exposure to better support plant growth.
Soil and Fertilization:
The soil needs to be breathable and well-draining. We use peanut shells as a medium to retain moisture and provide space for aerial root growth. Every 10-15 days, a diluted liquid orchid foliar fertilizer is sprayed, and organic soil fertilizer is applied every 3-4 months.
Flower Buds:
With the proper environment and management, flower buds typically begin to develop around April to May, approximately 2-3 years after planting.
Pollination
Hand Pollination
In a natural environment, the pollination rate of vanilla flowers is less than 1%. Vanilla flowers typically bloom around 5 a.m. and begin to wilt after 12 hours. Therefore, hand pollination is necessary, as it significantly impacts both yield and pollination success rates.
Harvesting
Manual Harvesting
After successful pollination, the vanilla pods show significant growth in length, width, and thickness, reaching full formation within 35 days. It takes about 8 months for the pods to mature fully. When they are ready, the pods change from dark green to light green, with a slight yellow tint at the tip, indicating the optimal harvest time.
Processing
Post-Harvest Processing
After harvesting, the vanilla pods are initially sorted, as this affects the duration of the blanching step. Pods are immersed in hot water at about 70°C for 3 to 5 minutes. After blanching, they are wrapped in cloth and placed in boxes for two days to naturally ferment. Following fermentation, the pods are exposed to sunlight or machine-dried daily until their moisture content reduces to around 40%, completing the curing process. Finally, the pods are aged in a well-ventilated indoor space for at least three months.
