Processing
Post-Harvest Processing
After harvesting, the vanilla pods are initially sorted, as this affects the duration of the blanching step. Pods are immersed in hot water at about 70°C for 3 to 5 minutes. After blanching, they are wrapped in cloth and placed in boxes for two days to naturally ferment. Following fermentation, the pods are exposed to sunlight or machine-dried daily until their moisture content reduces to around 40%, completing the curing process. Finally, the pods are aged in a well-ventilated indoor space for at least three months.
